Ingredients

  • 170 grams Unsalted butter
  • 200 grams Dark chocolate (70% cocoa, chopped)
  • 200 grams Granulated sugar
  • 100 grams Light brown sugar
  • 3 Eggs
  • 2 teaspoons Vanilla extract
  • 120 grams All-purpose flour
  • 30 grams Unsweetened cocoa powder
  • 0.5 teaspoon Salt
  • 225 grams Mascarpone cheese
  • 4 tablespoons Honey
  • 120 milliliters Heavy cream

Directions

Step 1

Preheat the oven to 175°C (350°F). Line a 9x9-inch square baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2

In a heatproof bowl, melt the butter and chopped dark chocolate together over a double boiler or in 30-second intervals in the microwave. Stir until smooth, then set aside to cool slightly.

Step 3

In a large mixing bowl, whisk together the granulated sugar, light brown sugar, and eggs until light and frothy, about 2 minutes. Stir in the vanilla extract.

Step 4

Slowly pour the melted butter and chocolate mixture into the egg-sugar mixture, whisking constantly to combine.

Step 5

Sift in the flour, cocoa powder, and salt. Fold gently with a spatula until just combined. Be careful not to overmix.

Step 6

Add the mascarpone cheese in dollops and gently swirl it into the brownie batter using a knife or skewer. Avoid fully mixing it in to create luscious pockets of mascarpone.

Step 7

Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and let cool completely in the pan on a wire rack.

Step 8

While the brownies are cooling, prepare the honey chocolate sauce. In a small saucepan, combine the remaining chopped dark chocolate, honey, and heavy cream. Heat over low heat, stirring constantly until the chocolate is fully melted and the sauce is silky smooth.

Step 9

Once the brownies are cool, lift them out of the pan using the parchment paper overhang and slice into 12 squares.

Step 10

Drizzle the warm honey chocolate sauce over the brownies before serving. Enjoy your decadent Mascarpone Brownies with Honey Chocolate Sauce!
