Ingredients

  • 4 large Russet potatoes
  • 1 cup Mascarpone cheese
  • 4 tablespoons Unsalted butter
  • 0.25 cup Whole milk
  • 0.25 cup Fresh chives
  • 2 cloves Garlic cloves, minced
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Olive oil (for greasing)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking dish with olive oil.

Peel the russet potatoes and cut them into even-sized chunks.
