Ingredients

  • 2 cups Mustard greens (finely chopped)
  • 1 cup Chickpea flour (besan)
  • 1 medium Red onion (finely chopped)
  • 1 teaspoon Ginger (grated)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Garam masala
  • 0.25 teaspoon Red chili powder
  • 0.75 teaspoon Salt
  • 2 tablespoons Fresh cilantro (finely chopped)
  • 1 tablespoon Lemon juice
  • 0.5 cup Water
  • 3 tablespoons Vegetable oil (for shallow frying)

Directions

Step 1

In a large mixing bowl, combine the finely chopped mustard greens, red onion, grated ginger, minced garlic, and fresh cilantro.

Step 2

Add the chickpea flour, cumin powder, coriander powder, turmeric powder, garam masala, red chili powder, and salt. Mix well to ensure all the spices are evenly distributed.

Step 3

Squeeze in the lemon juice and gradually add water, a little at a time, mixing until a thick, slightly sticky dough-like consistency forms. The mixture should hold together when shaped into patties.

Step 4

Divide the mixture into 8 equal portions and shape them into round, flat patties about ½ inch thick.

Step 5

Heat a skillet or frying pan over medium heat and add the vegetable oil.

Step 6

Carefully place the patties in the skillet, ensuring not to overcrowd the pan. Cook for 3-4 minutes on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.

Step 7

Remove the cooked patties and place them on a plate lined with paper towels to drain any excess oil.

Step 8

Serve warm with your favorite chutney, yogurt dip, or as a side to a main dish.
