  • 2 cups water
  • 1 inch piece fresh ginger
  • 3 pieces green cardamom pods

  • 3 pieces cloves
  • 4 pieces black peppercorns
  • 1 teaspoon fennel seeds
  • 2 teaspoons black tea leaves
  • 1.5 cups milk
  • 2 tablespoons sugar (or sweetener of choice)

Directions

Step 1

Add 2 cups of water to a medium-sized saucepan and place it over medium heat.

Step 2

Peel and lightly crush the 1-inch piece of fresh ginger using the flat side of a knife or a mortar and pestle. Add it to the water.

Lightly crush the green cardamom pods (3 pieces), cloves (3 pieces), black peppercorns (4 pieces), and add them to the saucepan along with the 1 cinnamon stick and 1 teaspoon of fennel seeds.

Bring the water and spice mixture to a boil, then reduce the heat to a simmer and allow the spices to steep for 3-4 minutes.
