Ingredients

  • 1 cup Masa harina
  • 1 cup Polenta (coarse cornmeal)
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 0.25 cup Granulated sugar
  • 0.5 cup Unsalted butter, melted and slightly cooled
  • 1.25 cups Buttermilk
  • 2 Eggs
  • 1 cup Canned corn kernels, drained (optional)
  • 2 tablespoons Honey (optional, for added sweetness)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a standard 12-cup muffin tin with paper liners or lightly grease each cavity with butter or cooking spray.

Step 2

In a large mixing bowl, whisk together the dry ingredients: masa harina, polenta, all-purpose flour, baking powder, baking soda, salt, and granulated sugar.

Step 3

In a separate bowl, whisk together the wet ingredients: melted butter, buttermilk, eggs, and honey (if using).

Step 4

Gradually pour the wet ingredients into the bowl with the dry ingredients and stir just until combined. Be careful not to overmix—the batter should look slightly lumpy.

Step 5

Fold in the drained canned corn kernels gently, if you're using them.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.

Step 7

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm with butter, honey, or as a side to your favorite soups, stews, or chili.
