Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set aside.
In a medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
In a large mixing bowl, use a hand or stand mixer to cream the softened butter and granulated sugar on medium speed until light and fluffy, about 2-3 minutes.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Reduce mixer speed to low and gradually alternate adding the dry flour mixture and the whole milk, beginning and ending with the flour mixture. Mix just until combined.
Gently fold in the finely chopped fresh strawberries. Add the optional pink food coloring if you'd like a stronger strawberry hue.
Evenly divide the batter between the prepared cake pans. Smooth the tops with a spatula.
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then carefully transfer them to a wire rack to cool completely.
While the cakes cool, prepare the frosting. In a large bowl, beat the softened cream cheese and powdered sugar together on medium speed until smooth.
Gradually add the heavy whipping cream and continue beating on high speed until the frosting becomes light, fluffy, and spreadable.
Once the cakes are completely cool, spread a thin layer of strawberry jam on top of one cake layer. Add a layer of frosting over the jam.
Place the second cake layer on top, then frost the entire cake with the cream cheese frosting.
Decorate the top of the cake with the sliced fresh strawberries. Arrange them in a decorative pattern of your choice.
Chill the cake in the refrigerator for at least 30 minutes before serving to allow the flavors to meld and the frosting to set.
Slice and serve your Strawberry Party Cake to delighted guests!
