Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, softened
  • 0.5 cups Creamy peanut butter
  • 0.75 cups Brown sugar, packed
  • 0.25 cups Granulated sugar
  • 0.25 cups Molasses
  • 1 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 0.25 cups Granulated sugar (for rolling, optional)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand mixer or stand mixer to cream the softened butter, peanut butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the molasses, egg, and vanilla extract to the butter mixture. Mix until fully combined, scraping down the sides of the bowl as needed.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Step 6

If desired, pour the additional 1/4 cup of granulated sugar into a small bowl for coating.

Step 7

Scoop tablespoon-sized portions of dough and roll them into balls. If using the granulated sugar for coating, roll each dough ball in the sugar to coat completely.

Step 8

Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Gently press down on each ball with the tines of a fork, creating a crosshatch pattern.

Step 9

Bake the cookies in the preheated oven for 9-11 minutes, or until the edges are set and the tops look slightly crackled. Do not overbake as they will continue to firm up as they cool.

Step 10

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve and enjoy your homemade Mary Jane's Peanut Butter Molasses Cookies!
