Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 pieces large eggs
  • 2 teaspoons pure vanilla extract
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons salt
  • 3 cups rolled oats
  • 1 cup raisins (optional)
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 3

Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 4

In a medium mixing bowl, whisk together the flour, baking soda, cinnamon, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Step 6

Stir in the rolled oats, and if using, fold in the raisins and chopped walnuts.

Step 7

Scoop out heaping tablespoons of the cookie dough and drop them onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 8-10 minutes, or until the edges are golden brown and the centers look set but slightly soft.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the cookies warm or store in an airtight container at room temperature for up to 5 days.
