Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 15 ounces diced tomatoes, with juice
  • 8 ounces tomato sauce
  • 4 cups beef broth
  • 15 ounces black beans, drained and rinsed
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces corn kernels, drained
  • 2 tablespoons taco seasoning
  • 1 tablespoon ranch dressing mix
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0 optional toppings: shredded cheese, sour cream, tortilla chips, chopped cilantro, sliced jalapeños

Directions

Step 1

In a large pot, heat the olive oil over medium-high heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat if needed.

Step 3

Add the diced onion and garlic to the pot and sauté until fragrant and translucent, about 3-4 minutes.

Step 4

Stir in the taco seasoning, ranch dressing mix, salt, and black pepper. Cook for 1 minute to release the spices’ aroma.

Step 5

Add the diced tomatoes (with their juice), tomato sauce, and beef broth. Stir to combine.

Step 6

Add the black beans, kidney beans, and corn kernels. Stir until all ingredients are well mixed.

Step 7

Bring the soup to a simmer. Lower the heat to medium-low, cover, and let the soup cook for 20 minutes to allow the flavors to meld.

Step 8

Taste and adjust seasoning as needed.

Step 9

Ladle the taco soup into bowls, and garnish with your desired toppings, such as shredded cheese, sour cream, tortilla chips, chopped cilantro, or sliced jalapeños.

Step 10

Serve warm and enjoy!
