Directions

Step 1

Rinse the split peas thoroughly under cold water and set aside.

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the diced onion, carrots, and celery, and cook for 5-7 minutes, stirring occasionally, until softened.
