Ingredients

  • 6 tablespoons unsalted butter
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg

Directions

Step 1

Preheat your oven to 425°F (220°C). Place a 10-inch cast-iron skillet in the oven as it heats.

Step 2

In a medium microwave-safe bowl, melt 4 tablespoons of the butter. Set aside the remaining 2 tablespoons for later use.

Step 3

In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt.

Step 4

In a separate mixing bowl, whisk together the buttermilk and egg. Slowly pour the melted butter into the buttermilk mixture while whisking to combine.

Step 5

Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir gently until just combined; do not overmix.

Step 6

Carefully remove the hot skillet from the oven using oven mitts. Add the remaining 2 tablespoons of butter to the skillet and swirl to coat the bottom and sides.

Step 7

Pour the cornbread batter into the hot skillet, spreading it evenly. The batter will sizzle and begin to set along the edges.

Step 8

Bake in the oven for 18-20 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 9

Allow the cornbread to cool in the skillet for 5-10 minutes. Slice into wedges and serve warm, ideally with honey or a pat of butter.
