Ingredients

  • 1 box Yellow cake mix
  • 11 ounces Mandarin oranges (with juice)
  • 4 units Large eggs
  • 0.5 cups Vegetable oil
  • 20 ounces Crushed pineapple (with juice)
  • 3.4 ounces Instant vanilla pudding mix
  • 12 ounces Whipped topping (thawed)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Step 2

In a large mixing bowl, combine the yellow cake mix, mandarin oranges along with their juice, eggs, and vegetable oil.

Step 3

Use an electric mixer to beat the mixture on low speed until just combined, then increase to medium speed and beat for about 2 minutes. The batter should look smooth and slightly fluffy.

Step 4

Divide the batter evenly between the prepared cake pans and spread evenly.

Step 5

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Step 6

Remove the cake layers from the oven and allow them to cool in the pans for about 10 minutes. Then transfer them to a wire rack to cool completely.

Step 7

While the cake layers are cooling, prepare the frosting. In a separate bowl, combine the crushed pineapple (with its juice) and instant vanilla pudding mix. Stir until the mixture begins to thicken.

Step 8

Fold the whipped topping into the pineapple and pudding mixture until well incorporated. This will create a light and fluffy frosting.

Step 9

Once the cake layers are completely cool, spread the frosting generously over the top of the first layer. Place the second layer on top and spread frosting over the top and sides of the cake.

Step 10

Refrigerate the cake for at least 1-2 hours before serving to allow the flavors to meld and the frosting to set.

Step 11

Slice and serve chilled. Enjoy your moist, citrusy Pea Picking Cake!
