  • 0.75 cup plain Greek yogurt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 0.5 cup raisins or dried cranberries (optional)
  • 0.5 cup chopped nuts (optional, e.g. walnuts or almonds)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or lightly grease the tin.

Step 2

In a large mixing bowl, combine the oat bran, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Stir well to evenly distribute the dry ingredients.

Step 3

In a separate medium-sized mixing bowl, whisk together the brown sugar, milk, Greek yogurt, egg, vanilla extract, and honey until the mixture is smooth and fully combined.

Step 4

Pour the wet ingredients into the bowl of dry ingredients. Using a wooden spoon or spatula, gently fold the mixture together just until combined. Be careful not to overmix; the batter should be slightly lumpy.
