Ingredients

  • 1 pound Italian sausage
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 Garlic cloves, minced
  • 2 medium Carrots, diced
  • 2 Celery stalks, diced
  • 28 ounces Crushed tomatoes
  • 6 cups Chicken broth
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Zucchini, diced
  • 1 cup Small pasta (e.g., ditalini or elbow)
  • 2 tablespoons Fresh parsley, chopped
  • 0 Parmesan cheese, grated (optional, for serving)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the Italian sausage, breaking it apart with a wooden spoon, and cook until browned and fully cooked through, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving any rendered fat in the pot.

Step 3

Add the diced onion, garlic, carrots, and celery to the pot. Sauté until the vegetables are softened, about 5 minutes.

Step 4

Stir in the crushed tomatoes, chicken broth, dried basil, dried oregano, salt, and black pepper. Bring to a boil, then reduce the heat to a simmer.

Step 5

Return the cooked sausage to the pot and let the soup simmer for 20 minutes to allow the flavors to meld.

Step 6

Add the diced zucchini and pasta to the soup. Continue to cook until the pasta is tender, about 8-10 minutes.

Step 7

Stir in the fresh parsley and adjust the seasoning with additional salt and pepper, if necessary.

Step 8

Serve hot, garnished with grated Parmesan cheese if desired. Enjoy with crusty bread for a complete meal.
