Ingredients

  • 3 cups cooked and shredded chicken
  • 8 ounces egg noodles
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1.5 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1.5 cups crushed Ritz crackers
  • 0.25 cups melted butter
  • 2 tablespoons optional chopped parsley (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish and set aside.

Step 2

Cook the egg noodles according to package instructions. Drain and set aside.

Step 3

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the diced onion and cook until soft and translucent, about 4-5 minutes. Stir in the minced garlic and cook for another 1-2 minutes, until fragrant.

Step 4

In a large mixing bowl, combine the cooked and shredded chicken, cooked egg noodles, cream of chicken soup, sour cream, chicken broth, cooked onion and garlic mixture, salt, and black pepper. Stir until everything is evenly combined.

Step 5

Transfer the chicken noodle mixture into the prepared casserole dish, spreading it out evenly.

Step 6

Sprinkle the shredded cheddar cheese evenly over the top of the mixture.

Step 7

In a small bowl, mix the crushed Ritz crackers with the 1/4 cup of melted butter. Stir until the mixture resembles wet sand, then sprinkle it evenly over the cheese layer.

Step 8

Place the casserole in the preheated oven and bake for 25-30 minutes, or until hot and bubbly, and the cracker topping is golden brown.

Step 9

Remove the casserole from the oven and let it rest for 5 minutes before serving.

Step 10

Optional: Garnish with chopped parsley for a pop of freshness before serving. Enjoy!
