Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup jam (strawberry, raspberry, or your choice)
  • 0.25 cup powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 3

Beat in the egg and vanilla extract until fully incorporated.

Step 4

In another bowl, whisk together the flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Step 6

Divide the dough into two portions. Roll each portion out on a lightly floured surface to about 1/8-inch thickness.

Step 7

Using a circular cookie cutter (about 2-3 inches in diameter), cut out an even number of cookie rounds (you’ll need a top and bottom for each filled cookie).

Step 8

Place half of the cookie rounds on the prepared baking sheets. Spoon about 1 teaspoon of jam into the center of each round on the baking sheet, leaving a small border around the edge.

Step 9

Place the remaining cookie rounds on top of the jam-filled cookies. Gently press the edges together to seal, using a fork if desired to create a decorative edge.

Step 10

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are just turning golden. Remove and let cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Step 11

If desired, sprinkle the cooled cookies with powdered sugar for a decorative finish.

Step 12

Serve and enjoy your homemade Mary’s Filled Sugar Cookies with a glass of milk or a cup of tea!
