Ingredients

  • 1 cup, grated zucchini
  • 1 cup, grated sweet potato
  • 1.5 cups all-purpose flour
  • 0.5 cups whole wheat flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 2 large eggs
  • 0.75 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts or pecans (optional)
  • 0.5 cup raisins or dried cranberries (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

Step 3

In a separate bowl, beat the eggs. Add the brown sugar, granulated sugar, vegetable oil, and vanilla extract, and mix until well combined.

Step 4

Fold the grated zucchini and grated sweet potato into the wet mixture.

Step 5

Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix.

Step 6

If using, fold in the chopped nuts and raisins or dried cranberries.

Step 7

Pour the batter into the prepared loaf pan, spreading it out evenly.

Step 8

Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 9

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.

Step 10

Serve plain or with a spread of butter or cream cheese. Enjoy!
