Ingredients

  • 200 grams pitted dates
  • 250 ml boiling water
  • 1 teaspoon baking soda
  • 100 grams unsalted butter
  • 150 grams brown sugar
  • 2 items large eggs
  • 1 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and flour an 8-inch round baking pan or line it with parchment paper.

Step 2

In a small bowl, combine the pitted dates and boiling water. Stir in the baking soda and set aside to soak for 10–15 minutes, allowing the dates to soften.

Step 3

While the dates are soaking, cream the unsalted butter and brown sugar in a large mixing bowl until light and fluffy using an electric mixer or a whisk.

Step 4

Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.

Step 5

Using a blender or a food processor, purée the soaked dates and their liquid until slightly smooth but still slightly chunky. Add the date mixture to the wet ingredients and mix well.

Step 6

In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture, being careful not to overmix.

Step 7

Pour the batter into the prepared baking pan, spreading it evenly.

Step 8

Bake the pudding in the preheated oven for 40–45 minutes or until a toothpick inserted into the center comes out clean.

Step 9

Remove the pudding from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely or serve warm.

Step 10

Enjoy warm or room temperature with cream, custard, or a drizzle of toffee sauce for indulgence.
