Ingredients

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tablespoon thyme leaves, fresh
  • 2 tablespoons parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the chicken thighs dry with a paper towel. Season both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. When the oil is hot, add the chicken thighs skin-side down. Cook for 6-8 minutes until the skin is golden and crispy. Flip the chicken over and cook for an additional 4-5 minutes. Remove the chicken from the skillet and set aside.

Step 3

Lower the heat to medium and add the butter to the skillet. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Pour in the chicken broth and scrape the bottom of the skillet to deglaze, loosening any brown bits for added flavor. Bring the broth to a simmer.

Step 5

Stir in the heavy cream and thyme leaves. Let the sauce simmer for 2-3 minutes until it thickens slightly.

Step 6

Return the chicken thighs to the skillet, skin-side up. Spoon some of the sauce over the chicken, then cover the skillet with a lid and simmer on low heat for 20-25 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).

Step 7

Taste the sauce and adjust seasoning with additional salt and pepper, if necessary.

Step 8

Transfer the chicken to a serving plate and spoon the sauce over the top. Garnish with fresh parsley, if desired.

Step 9

Serve hot with your choice of sides, such as mashed potatoes, rice, or roasted vegetables.
