Ingredients

  • 8 large eggs
  • 1 cup whole milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pound breakfast sausage
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 2 cups baby spinach
  • 2 cups shredded cheddar cheese
  • 4 cups day-old bread, cubed
  • 1 tablespoon butter, for greasing the dish

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish with butter and set aside.

Step 2

In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Break it into crumbles with a wooden spoon as it cooks. Remove from the skillet and set aside.

Step 3

In the same skillet, add the diced onion and red bell pepper. Sauté for 3-4 minutes until softened. Stir in the baby spinach and cook for an additional 1-2 minutes, just until wilted. Remove from heat.

Step 4

In a large mixing bowl, whisk together the eggs, whole milk, salt, and black pepper until well combined.

Step 5

Add the cubed bread to the greased casserole dish, spreading it out in an even layer. Top with the cooked sausage, sautéed vegetables, and 1 1/2 cups of the shredded cheddar cheese.

Step 6

Pour the egg mixture evenly over the contents of the casserole dish, ensuring the bread is fully soaked. Gently press down on the mixture with a spatula if needed.

Step 7

Sprinkle the remaining 1/2 cup of cheddar cheese over the top.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15 minutes, or until the casserole is set and the top is golden brown.

Step 9

Remove the casserole from the oven and let it cool slightly for 5-10 minutes before serving. Slice into squares and enjoy!
