Ingredients

  • 2.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 0.75 cups unsalted butter, softened
  • 1.5 cups granulated sugar
  • 3 units large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 2 cups fresh blueberries
  • 2 tablespoons all-purpose flour (for dusting blueberries)
  • 2 tablespoons powdered sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch round cake pan or a springform pan. Set aside.

Step 2

In a medium mixing bowl, whisk together 2.5 cups of all-purpose flour, 2 teaspoons of baking powder, and 0.5 teaspoon of salt. Set aside.

Step 3

In a large mixing bowl, cream together 0.75 cup of softened unsalted butter and 1.5 cups of granulated sugar using a hand mixer or a stand mixer on medium speed until light and fluffy, about 3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Stir in 2 teaspoons of vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the 1 cup of whole milk, starting and ending with the dry ingredients. Mix until just combined. Do not overmix.

Step 6

In a small bowl, toss the 2 cups of fresh blueberries with 2 tablespoons of flour to coat them. This helps prevent them from sinking to the bottom of the cake.

Step 7

Gently fold the coated blueberries into the batter using a spatula.

Step 8

Pour the batter into the prepared cake pan and spread it evenly with a spatula.

Step 9

Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Step 11

Optional: Dust the top of the cake with 2 tablespoons of powdered sugar before serving for a decorative touch.

Step 12

Slice and enjoy Mary's Blueberry Cake as a delightful dessert or alongside a cup of tea or coffee.
