  • 1 14-ounce can diced tomatoes (with juice)
  • 6 cups vegetable broth
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups baby spinach or kale, chopped
  • 0.25 cup fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.
