Ingredients

  • 250 grams Plain flour
  • 1 teaspoon Baking soda
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 125 grams Unsalted butter
  • 150 grams Granulated sugar
  • 2 tablespoons Golden syrup
  • 2 tablespoons Milk

Directions

Step 1

Preheat the oven to 180°C (160°C fan) or 350°F.

Step 2

Line two baking trays with parchment paper.

Step 3

In a large mixing bowl, sift together the plain flour, baking soda, ground ginger, and ground cinnamon.

Step 4

In a saucepan over low heat, melt the butter, sugar, and golden syrup together, stirring occasionally until smooth. Remove from heat and let cool slightly.

Step 5

Pour the cooled butter mixture into the dry ingredients and mix well.

Step 6

Add the milk and stir until a soft dough forms. If the dough feels too sticky, add a small amount of flour until manageable.

Step 7

Roll small portions of the dough into walnut-sized balls and place them onto the prepared baking trays, leaving space between each ball to allow for spreading.

Step 8

Gently flatten each ball slightly with your fingers or the back of a spoon.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and firm to touch.

Step 10

Remove from the oven and allow the gingernuts to cool on the trays for 5 minutes before transferring to a wire rack to cool completely.

Step 11

Store the cooled gingernuts in an airtight container for up to a week.
