Ingredients

  • 8 medium (about 1 pound) Tomatillos
  • 1 medium Jalapeño
  • 2 large Garlic cloves
  • 0.5 medium White onion
  • 0.5 cup loosely packed Fresh cilantro
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 0.25 cup (optional, as needed for blending) Water

Directions

Step 1

Husk and rinse the tomatillos under warm water to remove their sticky coating.

Step 2

Place the tomatillos, jalapeño, and garlic cloves in a medium saucepan. Cover with water and bring to a boil over medium-high heat.

Step 3

Reduce the heat to a simmer and cook for 5-7 minutes, until the tomatillos turn a muted green and soften completely. Drain the water and let the ingredients cool slightly.

Step 4

Roughly chop the white onion and transfer it to a blender or food processor along with the cooked tomatillos, jalapeño, and garlic.

Step 5

Add the fresh cilantro, lime juice, and salt to the blender. Blend until smooth. If the salsa is too thick, add water 1 tablespoon at a time until you reach your desired consistency.

Step 6

Taste and adjust for seasoning, adding more lime juice or salt if needed.

Step 7

Transfer the salsa to a serving bowl or container. Let it cool to room temperature, or refrigerate for later use. Serve with tortilla chips, tacos, or your favorite dishes.
