Ingredients

  • 8 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 3 stalks celery, diced
  • 3 cloves garlic, minced
  • 16 ounces cremini mushrooms, cleaned and diced
  • 8 ounces white button mushrooms, cleaned and diced
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 10 cups day-old French bread, cubed
  • 3 cups chicken or vegetable stock
  • 2 large eggs, beaten

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.

Step 2

In a large skillet, melt 6 tablespoons of butter over medium heat. Add the diced onion, celery, and garlic, and sauté for 5–7 minutes until the vegetables are softened.

Step 3

Add the cremini and white button mushrooms to the skillet. Cook for 8–10 minutes, stirring occasionally, until the mushrooms release their liquid and begin to brown.

Step 4

Stir in the thyme, parsley, sage, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat.

Step 5

Place the cubed French bread in a large mixing bowl. Pour the mushroom mixture over the bread cubes and toss gently to combine.

Step 6

In a small bowl, whisk together the chicken or vegetable stock and the beaten eggs. Gradually pour the liquid mixture over the bread and mushrooms, tossing gently to ensure all the bread is evenly moistened.

Step 7

Transfer the stuffing mixture to the prepared baking dish, spreading it into an even layer. Dot the top with the remaining 2 tablespoons of butter, cut into small pieces.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 20 minutes, or until the top is golden and crisp.

Step 9

Remove the stuffing from the oven and let it rest for 5 minutes before serving. Enjoy!
