Ingredients

  • 200 grams Granulated Sugar
  • 120 ml Light Corn Syrup
  • 60 ml Water
  • 2 pieces Large Egg Whites
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt

Directions

Step 1

In a medium saucepan, combine the granulated sugar, light corn syrup, and water. Stir gently to combine, then place the pan over medium-high heat.

Step 2

Heat the mixture without stirring until it reaches 115°C (240°F) on a candy thermometer. This process can take a few minutes, so monitor the heat carefully.

Step 3

While the sugar syrup is heating, place the egg whites and a pinch of salt in a clean, grease-free mixing bowl. Using an electric mixer on medium speed, beat the egg whites until soft peaks form.

Step 4

Once the sugar syrup reaches the desired temperature, remove it from the heat. With the mixer running on low speed, slowly and carefully drizzle the hot sugar syrup into the egg whites. Be sure to pour it down the side of the bowl to avoid splattering.

Step 5

After all the syrup has been added, increase the mixer speed to high and whip the mixture until it is glossy and forms stiff peaks, about 5-7 minutes.

Step 6

Add the vanilla extract and mix for an additional 30 seconds to incorporate.

Step 7

Transfer the marshmallow whip to a clean, airtight container. Allow it to cool completely before using. Store in the refrigerator for up to 1 week.
