  • 0.25 teaspoon Salt
  • 0.5 teaspoon Cream of tartar

Directions

Step 1

In a medium saucepan, combine granulated sugar, water, light corn syrup, and salt. Place the saucepan over medium heat and stir gently until the sugar fully dissolves.

Step 2

Once the sugar mixture begins to simmer, stop stirring and allow it to boil. Heat until the mixture reaches 240°F (115°C) on a candy thermometer (soft-ball stage). Keep an eye on it to avoid burning.

Step 3

While the sugar mixture is heating, add the egg whites and cream of tartar to the bowl of a stand mixer fitted with a whisk attachment. Whip the egg whites on medium speed until soft peaks form, about 2–3 minutes.

When the sugar syrup reaches 240°F (115°C), immediately remove it from heat. With the mixer running on low speed, carefully and slowly drizzle the hot syrup into the whipped egg whites in a thin, steady stream. Aim to pour the syrup between the side of the bowl and the whisk to prevent splattering.

Step 5

Once all the syrup is added, increase the mixer speed to high. Continue whipping for 7–9 minutes, or until the mixture is thick, glossy, and forms stiff peaks.

Add the vanilla extract and whip for an additional 30 seconds to incorporate.
