  • 2 cloves Garlic, minced
  • 0.75 cup Breadcrumbs
  • 0.5 cup Milk
  • 2 large Eggs
  • 3 tablespoons Ketchup
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 large Roasted red peppers, jarred or freshly roasted
  • 2 tablespoons Tomato paste
  • 0.5 cup Chicken or vegetable stock
  • 1 teaspoon Sugar
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the ground beef, ground pork, chopped onion, minced garlic, breadcrumbs, milk, eggs, ketchup, Worcestershire sauce, salt, and black pepper. Mix until well combined, but avoid overmixing.

Step 3

Transfer the meat mixture into a loaf pan, pressing it down slightly to evenly distribute it.

Step 4

Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).

Step 5

While the meatloaf is baking, prepare the red pepper sauce. Heat the olive oil in a saucepan over medium heat.

Step 6

Add the roasted red peppers to the saucepan and sauté for 2-3 minutes.

Step 7

Stir in the tomato paste and cook for another 1-2 minutes to develop flavor.

Step 8

Pour in the chicken or vegetable stock and add the sugar. Stir well and simmer for 5-7 minutes.

Step 9

Use an immersion blender or transfer the mixture to a blender to puree the sauce until smooth. Taste and adjust seasoning if needed.

Step 10

Once the meatloaf is cooked, remove it from the oven and let it rest for 5-10 minutes before slicing.

Step 11

Serve slices of meatloaf topped with the red pepper sauce. Garnish with chopped parsley, if desired.
