Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 0.25 cups all-purpose flour
  • 1.5 teaspoons salt
  • 1 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 0.5 cups red wine (optional)
  • 3 medium carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and cut into 1-inch pieces
  • 2 stalks celery stalks, sliced
  • 1 teaspoons dried thyme
  • 1 teaspoons dried rosemary
  • 2 bay leaves
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

In a large mixing bowl, toss the beef cubes with flour, salt, and black pepper until evenly coated.

Step 2

Heat olive oil in a large Dutch oven or heavy-bottom pot over medium-high heat.

Step 3

Working in batches, sear the beef cubes on all sides until browned. Remove the beef and set aside.

Step 4

In the same pot, add the diced onion and sauté until softened, about 3-4 minutes. Add garlic and cook for 1 minute until fragrant.

Step 5

Stir in the tomato paste and cook for 1-2 minutes to deepen its flavor.

Step 6

If using red wine, pour it into the pot and scrape up any browned bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.

Step 7

Return the seared beef to the pot and pour in the beef broth. Add thyme, rosemary, and bay leaves. Stir to combine.

Step 8

Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour, stirring occasionally.

Step 9

Add the carrots, potatoes, and celery to the pot. Continue to simmer, covered, for an additional 45 minutes to 1 hour until the vegetables and beef are tender.

Step 10

Remove the bay leaves. Stir in the frozen peas and let them cook for 5 minutes.

Step 11

Taste and adjust seasoning with additional salt and pepper if needed.

Step 12

Garnish with fresh parsley before serving, if desired. Serve hot with crusty bread or over cooked rice.
