Ingredients

  • 6 ears Fresh corn (on the cob)
  • 2 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 0.5 cup Whole milk
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoon Kosher salt
  • 0.25 teaspoon Ground black pepper
  • 1 tablespoon All-purpose flour

Directions

Step 1

Carefully shuck the fresh corn and remove all the silk. Wash the ears of corn thoroughly under cool running water.

Step 2

Using a sharp knife, slice off the kernels from all six ears of corn over a large bowl. Then, use the back of the knife to scrape down the cob to extract as much of the milky corn juices as possible. Set aside the kernels and their juices.

Step 3

In a large skillet, melt the unsalted butter over medium heat. Add the corn kernels and the extracted corn milk to the skillet, stirring to coat the kernels in butter.

Step 4

In a small saucepan, combine heavy cream and whole milk. Warm the mixture over low heat but don't bring it to a boil. Once warm, pour the cream and milk mixture over the corn in the skillet.

Step 5

Stir in the granulated sugar, kosher salt, and ground black pepper for a balanced sweetness and seasoning. Let the mixture simmer gently over low to medium heat for about 10 minutes, stirring occasionally.

Step 6

In a small bowl, whisk together the all-purpose flour with 2 tablespoons of water to form a smooth slurry. Slowly add this to the corn mixture while stirring constantly. This will thicken the cream style corn.

Step 7

Continue to cook for another 5-8 minutes until the mixture achieves a creamy, thick consistency. Taste and adjust seasoning if necessary.

Step 8

Remove from heat and let it rest for a few minutes before serving. Serve warm as a side dish to complement your favorite meal.
