Directions

Step 1

Place the chicken thighs in a large pot. Add the water and chicken broth, and bring to a boil over medium-high heat. Skim off any foam that rises to the top.

Add the carrots, celery, onion, garlic, bay leaves, 1 teaspoon of salt, black pepper, and thyme to the pot. Reduce the heat to a simmer, cover, and cook for 30 minutes, until the chicken is fully cooked and tender.
