Ingredients

  • 210 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 120 grams Plain Greek yogurt (low-fat or non-fat)
  • 70 grams Honey
  • 2 large Eggs
  • 60 milliliters Lemon juice
  • 1 tablespoon Lemon zest
  • 60 grams Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 30 grams Powdered sugar (optional for glaze)
  • 1 tablespoon Water (optional for glaze)
  • 1 spray Non-stick cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan with non-stick cooking spray and set aside.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set this dry mixture aside.

Step 3

In a large mixing bowl, combine the Greek yogurt, honey, and eggs. Whisk until well blended.

Step 4

Add the lemon juice, lemon zest, applesauce, and vanilla extract to the wet mixture. Whisk until uniform and smooth.

Step 5

Gradually fold the dry mixture into the wet mixture using a spatula or wooden spoon. Mix just until the batter is combined and there are no visible streaks of flour. Avoid overmixing to keep the loaf tender.

Step 6

Pour the batter into the prepared loaf pan and use a spatula to smooth the surface evenly.

Step 7

Bake the lemon loaf in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 8

Remove the loaf from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.

Step 9

If adding a glaze, whisk together the powdered sugar and water in a small bowl until smooth. Drizzle the glaze over the cooled loaf and allow it to set before slicing.

Step 10

Slice the loaf into 10 equal pieces and serve. Store leftovers in an airtight container at room temperature for up to 3 days.
