Heat the olive oil in a large, heavy-bottomed pot over medium-high heat.
Season the beef stew meat with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
Sear the beef in batches until well-browned on all sides, about 5-6 minutes per batch. Remove the beef and set aside.
Dice the yellow onion and mince the garlic. Slice the carrots and celery into bite-sized chunks. Peel and cut the potatoes into cubes.
In the same pot, add the diced onion and cook until translucent, about 5 minutes. Stir in the garlic and cook for 1 minute until fragrant.
