Ingredients

  • 2 pounds beef stew meat
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 3 garlic cloves
  • 3 large carrots
  • 3 celery stalks
  • 3 medium potatoes
  • 3 tablespoons tomato paste
  • 6 cups beef broth
  • 1 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot over medium-high heat.

Step 2

Season the beef stew meat with 1 teaspoon of salt and 1/2 teaspoon of black pepper.

Step 3

Sear the beef in batches until well-browned on all sides, about 5-6 minutes per batch. Remove the beef and set aside.

Step 4

Dice the yellow onion and mince the garlic. Slice the carrots and celery into bite-sized chunks. Peel and cut the potatoes into cubes.

Step 5

In the same pot, add the diced onion and cook until translucent, about 5 minutes. Stir in the garlic and cook for 1 minute until fragrant.

Step 6

Add the tomato paste to the pot and stir well, cooking for 2 minutes to deepen the flavor.

Step 7

Sprinkle the all-purpose flour over the onion mixture and stir for 1-2 minutes to create a light roux.

Step 8

Deglaze the pot with the red wine, scraping up any browned bits from the bottom of the pot.

Step 9

Return the seared beef to the pot and pour in the beef broth. Add the Worcestershire sauce, bay leaves, thyme, and the remaining salt and pepper. Stir well.

Step 10

Bring the stew to a boil, then reduce the heat to low and cover. Simmer for 1 hour, stirring occasionally.

Step 11

Add the carrots, celery, and potatoes to the pot. Cover and continue simmering for an additional 30-40 minutes, or until the vegetables and beef are tender.

Step 12

Taste and adjust seasoning as needed. Remove the bay leaves before serving.

Step 13

Garnish with freshly chopped parsley before serving with crusty bread or over white rice.
