Ingredients

  • 2 cups all-purpose flour
  • 0.75 cups unsalted butter, softened
  • 0.5 cups granulated sugar
  • 0.5 cups light brown sugar, packed
  • 1 piece large egg
  • 1 teaspoon vanilla extract
  • 0.5 cups orange marmalade
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 0.25 teaspoons ground cinnamon (optional)
  • 2 tablespoons powdered sugar (for garnish, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon (if using). Set aside.

Step 3

In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, granulated sugar, and light brown sugar until smooth and fluffy, about 2-3 minutes.

Step 4

Add the egg and vanilla extract to the butter mixture. Beat until fully combined.

Step 5

Mix in the orange marmalade, ensuring it is evenly incorporated.

Step 6

Gradually add the dry flour mixture into the wet mixture. Stir until just combined, being careful not to overmix.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake; the cookies should remain soft in the center.

Step 9

Remove the baking sheets from the oven and allow the cookies to rest for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

If desired, dust the cooled cookies lightly with powdered sugar before serving.
