Ingredients

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 2 teaspoons Cinnamon
  • 0.5 teaspoons Salt
  • 1 cup Vegetable oil
  • 4 large Eggs
  • 3 cups Carrots, grated
  • 2 teaspoons Vanilla extract
  • 1 cup Crushed pineapple, drained
  • 0.5 cup Chopped walnuts (optional)
  • 8 ounces Cream cheese
  • 0.5 cup Unsalted butter, softened
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a large bowl, sift together the flour, sugar, baking powder, cinnamon, and salt. Mix well to combine.

Step 3

In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth.

Step 4

Gradually stir the wet ingredients into the dry ingredients until just combined. Do not overmix.

Step 5

Fold in the grated carrots, crushed pineapple, and walnuts (if using) until evenly distributed.

Step 6

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 7

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center of the cakes comes out clean.

Step 8

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.

Step 9

To prepare the frosting, beat the cream cheese and butter together in a large bowl using a hand or stand mixer until smooth and creamy.

Step 10

Gradually add powdered sugar, 1 cup at a time, mixing well after each addition. Stir in vanilla extract.

Step 11

Once the cakes are completely cool, spread a layer of frosting on top of one cake layer, then place the second layer on top.

Step 12

Frost the top and sides of the assembled cake evenly. Decorate with additional walnuts if desired.

Step 13

Refrigerate for 1 hour before serving to allow the frosting to set. Enjoy!
