If using canned chickpeas, drain and rinse them. If using cooked chickpeas, reserve some of the cooking liquid for later.
In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and salt.
Process the mixture for about 1–2 minutes, pausing to scrape down the sides of the bowl, until the hummus is smooth and creamy.
