Rinse and measure out the wheat berries, spelt berries, barley, millet, lentils, great northern beans, kidney beans, and black beans. Combine them in a large bowl.
Using a grain mill or high-powered blender, grind the mixture into fine flour.
In a large mixing bowl, combine 4 cups of warm water, olive oil, honey, and salt. Stir until the honey and salt dissolve.
Sprinkle the instant yeast over the water mixture and let it sit for 5 minutes to activate.
Gradually stir the freshly ground flour mixture into the water mixture using a wooden spoon or dough hook on a stand mixer.
Once the dough starts to come together, add the vital wheat gluten to improve texture and elasticity.
Turn the dough out onto a floured surface and knead for about 10 minutes, until smooth and slightly tacky. Alternatively, knead with a stand mixer for 5–7 minutes.
Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm spot for 1 hour or until doubled in size.
Punch down the dough, divide it into two equal portions, and shape them into loaves. Place each loaf in a greased 9x5-inch loaf pan.
Cover the pans and allow the loaves to rise for another 30 minutes, or until they rise slightly above the edge of the pans.
Preheat the oven to 375°F (190°C).
Bake the loaves in the preheated oven for 40–45 minutes, or until the tops are golden brown and the loaves sound hollow when tapped.
Remove the bread from the pans and cool completely on a wire rack before slicing.
