  • 6 slices Bacon
  • 2 tablespoons Unsalted butter
  • 1 medium Onion, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 3 tablespoons All-purpose flour
  • 3 cups Chicken broth
  • 3 medium Russet potatoes, peeled and diced
  • 3 6.5oz cans Canned clams, chopped (with juice)
  • 1 cup Heavy cream
  • 1 Bay leaf
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside on a paper towel-lined plate. Reserve 2 tablespoons of bacon drippings in the pot.

Step 2

Add the butter to the pot and melt it over medium heat. Stir in the diced onion and celery, cooking until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Sprinkle the flour over the onion mixture and stir well, cooking for 2 minutes to eliminate the raw flour taste.
