  • 2 tbsp Fresh parsley (chopped)
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 6 cups Mixed salad greens
  • 1 cup Cherry tomatoes (halved)
  • 1 medium Cucumber (sliced)
  • 0.5 small Red onion (thinly sliced)
  • 0.25 cup Feta cheese (crumbled)

Directions

Step 1

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, honey, Dijon mustard, fresh parsley, salt, and black pepper to create the marinade.

Step 2

Place the raw shrimp into a resealable plastic bag or a shallow dish, and pour the marinade over the shrimp. Seal or cover, and refrigerate for 15 minutes.

Heat a nonstick skillet over medium-high heat. Remove the shrimp from the marinade (reserving the marinade) and cook the shrimp in the skillet for 2–3 minutes per side, or until pink and fully cooked. Set aside to cool slightly.
