Cut the sashimi-grade tuna into small, evenly-sized cubes and place them in a mixing bowl.
In a separate bowl, create the marinade by combining soy sauce, sesame oil, rice vinegar, lime juice, grated ginger, and green onion.
Pour the marinade over the tuna, mix well, and refrigerate for at least 15 minutes to allow the flavors to meld.
While the tuna marinates, prepare the edamame puree by boiling the edamame beans in salted water for 4-5 minutes, then drain and let them cool for a few minutes.
In a food processor, blend the edamame beans, minced garlic, olive oil, water, and salt until smooth. Add more water if needed for a creamy consistency. Set aside.
Heat vegetable oil in a deep frying pan or pot to approximately 180°C (350°F).
Cut the wonton wrappers diagonally to create triangular pieces.
Fry the wonton wrappers in small batches until they are golden brown and crispy, about 30-45 seconds per side. Remove and drain them on paper towels.
To assemble, spread a dollop of edamame puree on a serving plate, top with a spoonful of marinated tuna, and garnish with a sprinkle of black sesame seeds.
Serve alongside the crispy wonton crisps as a dipping accompaniment or base for the tuna and puree.
