Ingredients

  • 250 g feta cheese
  • 100 g green olives (pitted)
  • 1 tbsp orange zest
  • 2 whole garlic cloves
  • 150 ml extra virgin olive oil
  • 1 tbsp fresh thyme leaves
  • 0.5 tsp red chili flakes
  • 0.25 tsp black pepper (freshly ground)

Directions

Step 1

Cut the feta cheese into small cubes, roughly 2 cm in size, and set aside.

Step 2

Rinse and drain the green olives. If they are not already pitted, remove the pits carefully.

Step 3

In a small bowl, combine the orange zest, fresh thyme leaves, red chili flakes, and freshly ground black pepper.

Step 4

Peel the garlic cloves and lightly smash them with the flat side of a knife to release their flavor.

Step 5

In a clean, sealable jar or container, layer the feta cubes and green olives, sprinkling the orange zest and herb mixture between layers.

Step 6

Add the smashed garlic cloves to the jar, tucking them amongst the feta and olives.

Step 7

Pour the extra virgin olive oil over the mixture until everything is fully submerged. Seal the jar tightly.

Step 8

Refrigerate the marinated feta cheese for at least 4 hours or preferably overnight to allow the flavors to meld together.

Step 9

Before serving, bring the marinated feta to room temperature for about 15 minutes. Serve with crusty bread, crackers, or as part of a charcuterie board.
