Ingredients

  • 2 large English cucumber
  • 4 tablespoons Rice vinegar
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 1.5 tablespoons Honey
  • 1 tablespoon Lime juice
  • 2 cloves Garlic
  • 1 medium Fresh red chili
  • 2 tablespoons Fresh cilantro
  • 2 stalks Green onions
  • 1 teaspoon Toasted sesame seeds

Directions

Step 1

Wash the cucumbers thoroughly and pat them dry.

Step 2

Using a knife or mandoline, slice the cucumbers into thin rounds and place them in a large mixing bowl.

Step 3

Peel and finely mince the garlic cloves. Slice the fresh red chili thinly, removing seeds for less heat if desired.

Step 4

In a small bowl, whisk together the rice vinegar, soy sauce, fish sauce, honey, and lime juice until the honey is fully dissolved.

Step 5

Pour the marinade over the sliced cucumbers. Add the minced garlic and chili slices to the bowl.

Step 6

Finely chop the fresh cilantro and green onions, then sprinkle them on top of the cucumbers.

Step 7

Gently toss everything together until the cucumber slices are evenly coated in the marinade.

Step 8

Cover the bowl and refrigerate for at least 20 minutes to allow the flavors to meld. For best results, marinate for up to 2 hours.

Step 9

Before serving, sprinkle the toasted sesame seeds over the top for added texture and flavor.

Step 10

Serve chilled as a side dish or a refreshing appetizer.
