Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 4 tablespoons Soy sauce
  • 2 tablespoons Hoisin sauce
  • 3 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 1 teaspoon Fresh ginger, grated
  • 2 cloves Garlic, minced
  • 4 cups Napa cabbage, shredded
  • 1 cup Carrots, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 1 medium Cucumber, thinly sliced
  • 2 stalks Green onions, chopped
  • 0.25 cup Cilantro leaves, chopped
  • 1 cup Chow mein noodles or crispy wonton strips
  • 1 tablespoon Toasted sesame seeds

Directions

Step 1

In a medium bowl, combine soy sauce, hoisin sauce, rice vinegar, sesame oil, honey, ginger, and garlic to create the marinade. Whisk until well blended.

Step 2

Place the chicken breasts in a resealable plastic bag or shallow container. Pour half of the marinade over the chicken, reserving the other half for dressing. Seal the bag or cover the container and refrigerate for at least 30 minutes, or up to 2 hours.

Step 3

Preheat a grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade and discard the used marinade. Grill the chicken for 6–7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing it thinly.

In a large salad bowl, combine shredded Napa cabbage, julienned carrots, sliced red bell pepper, sliced cucumber, green onions, and chopped cilantro.
