Ingredients

  • 500 g Chicken breast
  • 60 ml Soy sauce
  • 2 tbsp Lime juice
  • 2 cloves Garlic
  • 1 tbsp Ginger
  • 1 tbsp Honey
  • 2 tbsp Vegetable oil
  • 125 g Peanut butter
  • 200 ml Coconut milk
  • 1 tbsp Brown sugar
  • 1 tsp Chili sauce
  • 6 pieces Skewers (wooden or metal)
  • 1 tsp Salt
  • 0.5 tsp Pepper

Directions

Step 1

If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Step 2

Cut the chicken breasts into bite-sized chunks and place in a large mixing bowl.

Step 3

Prepare the marinade by combining soy sauce, lime juice, minced garlic, grated ginger, honey, vegetable oil, salt, and pepper in a small bowl. Mix well.

Step 4

Pour the marinade over the chicken chunks, ensuring they are all well-coated. Cover and refrigerate for at least 2 hours or overnight for the best flavor.

Step 5

While the chicken marinates, prepare the peanut satay sauce. In a saucepan over low heat, combine peanut butter, coconut milk, brown sugar, lime juice, and chili sauce. Stir constantly until the mixture is smooth and slightly thickened. Adjust seasoning to taste. Remove from heat and set aside.

Step 6

Preheat a grill or grill pan to medium-high heat.

Step 7

Thread the marinated chicken pieces onto skewers, making sure not to overcrowd them.

Step 8

Grill the chicken skewers for about 12-15 minutes, turning occasionally, until the chicken is fully cooked and slightly charred on the edges.

Step 9

Serve the chicken kebabs hot with a side of warm peanut satay sauce for dipping.
