Ingredients

  • 500 grams Large shrimp, peeled and deveined
  • 1 jar (about 300 grams) Marinated artichoke hearts, drained and quartered
  • 200 grams Mushrooms, sliced (button or cremini recommended)
  • 2 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 3 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Pat the shrimp dry with paper towels and season lightly with salt and pepper. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 3

Add the shrimp to the skillet in a single layer and cook for 2 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside on a plate.

In the same skillet, add the remaining 1 tablespoon of olive oil and unsalted butter. Allow the butter to melt.
