Ingredients

  • 2 medium Zucchini
  • 2 medium Summer squash
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 2 cloves Garlic
  • 2 tablespoons Fresh parsley
  • 1 tablespoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Slice the zucchini and summer squash into 1/4-inch thick rounds. If preferred, slice them lengthwise for larger grilling pieces.

Step 2

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, chopped parsley, thyme leaves, salt, black pepper, and red pepper flakes (if using).

Step 3

Place the sliced zucchini and summer squash in a large resealable bag or shallow dish. Pour the marinade over the vegetables, ensuring they are evenly coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes or up to 2 hours.

Step 4

Preheat your grill to medium-high heat (about 375–400°F) and lightly oil the grates to prevent sticking.

Step 5

Remove the zucchini and summer squash from the marinade, allowing any excess marinade to drip off. Reserve the remaining marinade for basting, if desired.

Step 6

Arrange the vegetable slices on the grill in a single layer. Cook for 3–4 minutes per side, or until grill marks appear and the vegetables are tender, but not mushy.

Step 7

Remove the grilled zucchini and summer squash from the grill and transfer to a serving platter.

Step 8

Garnish with additional chopped parsley, if desired, and serve immediately. Enjoy!
