Ingredients

  • 2 tablespoons Extra virgin olive oil
  • 1 medium Yellow onion, finely chopped
  • 4 cloves Garlic, minced
  • 28 ounces Canned whole San Marzano tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 5 leaves Fresh basil leaves, roughly chopped
  • 1 teaspoon Sugar
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Freshly ground black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 0.5 cup Water

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat until shimmering.

Step 2

Add the finely chopped onion to the pan and sauté for 5-7 minutes, or until soft and translucent.

Step 3

Stir in the minced garlic and cook for an additional 30 seconds, just until fragrant.

Step 4

Carefully pour in the canned San Marzano tomatoes, crushing them gently with your hands or a wooden spoon as you add them to the pan.

Step 5

Mix in the tomato paste, dried oregano, sugar, kosher salt, black pepper, and red pepper flakes (if using). Stir well to combine.

Step 6

Add the 0.5 cup of water to the sauce to loosen it slightly, then bring it to a gentle simmer.

Step 7

Reduce the heat to low and allow the sauce to simmer uncovered for 30-40 minutes, stirring occasionally. This will allow the flavors to deepen.

Step 8

About 10 minutes before the sauce is done simmering, stir in the basil leaves.

Step 9

Taste and adjust the seasoning with more salt or pepper as needed.

Step 10

Remove the sauce from heat and let it rest for a few minutes before serving. Use as a pasta sauce, pizza sauce, or for dipping!
