Scrub the beets clean, peel them, and grate them into thin strips using a box grater or food processor. Set them aside.
Peel and dice the carrots, potatoes, and onion. Thinly slice the cabbage into shreds. Mince the garlic.
In a large soup pot, heat the vegetable oil over medium heat. Add the onion and sauté for 3-4 minutes until translucent.
Stir in the garlic and cook for another minute until fragrant.
