Ingredients

  • 1 pound fresh green beans
  • 4 slices bacon
  • 2 tablespoons unsalted butter
  • 3 cloves garlic
  • 1 quarter cup sliced almonds
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup parmesan cheese (optional)

Directions

Step 1

Wash and trim the ends of the green beans. Set aside.

Step 2

Heat a large skillet over medium heat and cook the bacon until crispy, about 5-7 minutes. Remove the bacon and place on a paper towel-lined plate to cool. Once cooled, crumble into small bits.

Step 3

Remove excess bacon grease from the skillet, leaving about 1 tablespoon in the pan. Add the butter to the skillet and melt over medium heat.

Step 4

Mince the garlic cloves and add them to the melted butter. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 5

Add the green beans to the skillet and toss to coat in the garlic butter. Cover the skillet and cook for 8-10 minutes, stirring occasionally, until the green beans are tender but still crisp.

Step 6

In a small dry pan, toast the sliced almonds over medium-low heat for 2-3 minutes until lightly golden and fragrant. Be sure to stir frequently to avoid burning.

Step 7

Once the green beans are cooked, squeeze the lemon juice over them and season with salt and black pepper. Toss to combine.

Step 8

Gently fold in the crumbled bacon and toasted almonds.

Step 9

If desired, sprinkle the green beans with grated parmesan cheese before serving.

Step 10

Serve immediately as a flavorful side dish and enjoy!
