Ingredients

  • 2.5 cups cake flour
  • 2 cups granulated sugar
  • 2.5 teaspoons baking powder
  • 0.5 teaspoons salt
  • 6 pieces large eggs, separated
  • 0.5 cups vegetable oil
  • 0.75 cups fresh orange juice
  • 1 tablespoon grated orange zest
  • 0.5 teaspoons cream of tartar
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh orange juice (for glaze)
  • 1 teaspoon grated orange zest (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare an ungreased 10-inch tube pan.

Step 2

In a large mixing bowl, combine the cake flour, granulated sugar, baking powder, and salt. Whisk to combine evenly.

Step 3

In another bowl, whisk together the egg yolks, vegetable oil, orange juice, and orange zest until smooth.

Step 4

Gradually add the wet ingredients to the dry ingredients, mixing just until fully incorporated. Do not overmix.

Step 5

In a separate large, clean mixing bowl, beat the egg whites and cream of tartar with an electric mixer on medium speed until stiff peaks form.

Step 6

Gently fold the beaten egg whites into the batter, one-third at a time, using a spatula. Be careful not to deflate the egg whites while folding.

Step 7

Pour the batter evenly into the tube pan and smooth the surface.

Step 8

Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. The cake should be golden brown and set.

Step 9

Remove the cake from the oven and immediately invert the pan onto a bottle or heatproof funnel to cool completely. This prevents the cake from collapsing.

Step 10

Once cooled, run a knife around the edges of the pan to loosen the cake and carefully remove it.

Step 11

To prepare the glaze, whisk together the powdered sugar and orange juice in a small bowl until smooth and pourable.

Step 12

Drizzle the glaze evenly over the cooled cake, allowing it to drip down the sides.

Step 13

Sprinkle the grated orange zest over the top of the cake for garnish. Slice and serve to enjoy a taste of sunny Florida!
